TGS Tortellini

It unites people. It gives nourishment. The intentions with which you make it can affect those that consume it.
I love to cook. It’s therapeutic. It’s humbling. It’s fulfilling. It’s usually not burnt, and pretty decent to taste.
So tonight I made whole wheat pasta with organic pasta sauce for the family because my mom was busy helping my sister get ready for a camping trip. I called it “TGS Tortellini” because the three main flavours that stand out are tomatoes, ginger, and spinach. However a lot more can (and did) go into it…
So the basic prep:
In the first pot
A bunch of vegetables chopped (e.g. bell pepper [red,green,yellow], mushrooms, tomatoes, green onions, etc.)
A spoon of garlic paste
A spoon of ginger paste
Your usual salt, black pepper, red pepper, herbs
A jar of organic tomato & garlic pasta sauce (haha, I cheated). Usually I make it fresh but I was impatient.
Chopped up tofu
In the second pot
Whole wheat tortellini
A bunch of fresh chopped spinach
Some type of “good for your health” oil
A bit of salt
So what’s the deal?
Basically just cook the pasta sauce (cook the harder vegetables first). For the tortellini, let it boil and get soft, then add the spinach. The spinach shouldn’t cook too much - just for a minute.
This is like an easy, 10-15 minute vegetarian meal for someone to cook at home. I was doing my evening prayers while making it so I took my time and I think food tastes much better when the person making it has been meditating on the truth. Do you have any vegetarian recipes for pasta?

MMMMM that looks so delicious… I bet you could serve that topping over whole wheat rice or cous cous.

Thanks for your comment! Yes that’s a great idea. I love organic brown rice, the difference in taste is huge.
